Don’t forget, “salt of the earth” is a good thing

I’m so tired of people being afraid of salt.

Do you realize, no, how could you, unless you’ve spent time there, that Argentina has some kind of weird national mandate against over-salting the citizenry?

Yeah, it’s true. That’s why the pasta is ridiculously under-salted. So under-salted, in fact, that it’s nearly inedible and literally un-fixable once it’s in front of you. Believe me, I’ve tried.

This is why they say in the best cookbooks, salt here, salt there, salt now, salt again.

You see, you salt (and pepper), in layers. You layer the salt.

Salt is not bad for you, people.

At least, I don’t happen to believe that it is.

Iodized salt, adulterated salt, weird salt is another matter entirely, of course.

As is all doctored food.

Processed food.

Non-food foodstuffs.

“Edible food-like substances,” as Michael Pollan calls them. (But, are they edible?)

That stuff.

That stuff is not food. Not by a long shot.

I believe in salt.
